Food groups and their nutrients contents. The effect of environment and agricultural practices on food composition. Effect of handling and storage on nutritional value of fresh food. The effect of processing and preservation methods (heat treatments, freezing, drying, irradiation ... etc), packaging and storage, cooking and preparation of food on its nutritional value.
FSN 620 Advanced Applied Nutrition 2(2+0)
Recent advances in selected topics in applied nutrition in pregnancy and lactation. Infant and adolescence nutrition. Nutrition in Schools. Athletes’ nutrition. Alternative food patterns. National and international nutritional aspects.
FSN 630 Special nutritional aspects 3(3+0)
Dietary and nutritional imbalance. Food selection in cases of alimentary tract disorders (stomach, intestinal, pancreatic and liver). Nutrition of cases with kidney diseases, hypertension, atherosclerosis, diabetes mellitus, cancer and food allergy.
FSN 631 Nutritional aspects of energy balance 2(2+0)
Energy (energy metabolism, biochemistry of energy expenditure and metabolism, regulation of basal metabolism rate, physical activity, thermogenesis and food intake in the body weight, function of adipose tissue and brown adipose tissue in body weight, the key steps of regulation in intracellular glucose and fat metabolism). Obesity (historical development of scientific aspects, classification, childhood obesity, genetic and psychological aspects of obesity).

Nutritional interventions in new dietary applications. International approaches in nutrition supplements manufacturing, marketing and proscribing, Application of nutrition and physical activity and its roll in health.

Under the supervision of the course instructor, the student should conduct a lab or field research project in the area of human nutrition. He should present a report on his project at the end of the semester.

The student shall present an oral and written report on a selected topic in the field of human nutrition under the supervision of the course instructor.

BCH 530 Biochemical methodology 3(0+3)
Spectrometry: spectrophotometry (scanning), I.R. analysis, spectrofluorimetry. Chromatography: purification of proteins, affinity and/or hydrophobic chromatography. Electrophoresis: polyacrylamide gel electrophoresis (e.g. LDH isoenzymes), SDS-polyacrylamide gel electrophoresis (molecular weight determination), immunoelectrophoresis, isoelectric focusing. Centrifugation: sub-cellular fractionation, molecular weight determination by sucrose density gradient. Radioactive counting and radioimmunoassay. Gas chromatography of lipids. Transport of ions in biomembranes.
BCH 545 Inborn errors of metabolism 3(3+0)
Chromosome basis of human heredity, Disorders of carbohydrate metabolism (pentosuria, diseases of fructose metabolism and glycogen storage diseases). Amino acid metabolism (urea cycle disorders, disorders of folate metabolism), lipid and steroid metabolism (lipoprotein deficiency and hyper-lipoproteinemia, familial diseases of sterol metabolism). Purine, pyrimidine, metals and porphyrin metabolism. Disorders of connective tissue, muscle and bone metabolism. Defects in the transport of carbohydrates, lipids, amino acids and steroids. Deficiency of circulating enzymes and plasma proteins.
